Happy Halloween Everyone!!! \u00a0To celebrate this favorite pumpkin<\/em> holiday, we wanted to share a fun way to use your pumpkin<\/em> seeds! \u00a0Everyone knows how to roast them… but have you ever used them for chocolate bark? \u00a0I know I have not… so I wanted to try it this year!<\/p>\n

I found a recipe on-line, and then tweaked it… I substituted with some of my favorite ingredients – just to give it that Ruff<\/strong><\/em>\u00a0effect!<\/p>\n

Ingredients:
\n1. \u00a0(1) 12 oz bag of dark chocolate chips
\n2. \u00a01\/2 cup of roasted pumpkin seeds (salted only)
\n3. \u00a01\/2 cup of almonds
\n4. \u00a01\/2 cup of dried cranberries
\n5. \u00a0a few dashes of pumpkin pie spice OR {ginger, cinnamon, & nutmeg}
\n6. \u00a0a few dashes of rock salt (or sea salt)<\/p>\n

Directions:
\n1. Line a\u00a0baking\u00a0<\/a>sheet with\u00a0parchment paper<\/a>. \u00a0Spread the nuts, seeds, cranberries & spices on baking sheet.
\n2. \u00a0In a bowl set over a saucepan of gently simmering\u00a0water<\/a>, heat the chocolate chips, stirring occasionally, until it is about two-thirds melted; do not let the bowl touch the water. Remove the bowl from the saucepan and stir the chocolate until it is completely melted. \u00a0If the chocolate has not melted completely and is still too cool, set it over the saucepan for 1 or 2 minutes longer, stirring constantly; do not overheat.
\n3. Spread the chocolate over top of the seed mixture. \u00a0Sprinkle a little rock salt on top to finish.
\n4. \u00a0Refrigerate the bark for about 10 minutes, until hardened. Remove the parchment paper, break into pieces.<\/p>\n
