Spring is officially here and I am in full swing gardening mode!\u00a0 I simply love being outside on spring days in the Carolinas and there is nothing more refreshing than Lemons and Limes.<\/em>\u00a0 I love to drink lemon infused water on these gorgeous 70 degree days.\u00a0 The most perfect companion to a glass of chilled lemon water is a scrumptious Key Lime Cookie<\/strong>!\u00a0 I adapted my popular Pink Lemonade Cookies <\/a>recipe that I created to make a Key Lime Cookie concoction. I guess maybe the Pink Lemonade party<\/a> we featured a couple weeks ago inspired me to go citrus!<\/p>\n

(These would be perfect at a Citrus Party<\/a> or a Lemonade Party<\/a>, right!? Or Maybe to sell at a Lemonade Stand<\/a>?\u00a0 I love watching my kids be little entrepreneurs!)<\/p>\n

These cookies have the BEST texture with the perfect flavor combination – Soft, creamy, rich, tart and sweet and then finished off with a little crunch from the graham cracker crumb topping.<\/p>\n

One of the best parts of key lime pie is the graham cracker crust, so I had to incorporate graham crackers somehow.\u00a0 I couldn’t’ figure out how to add them into the dough without ruining it so I tried this.\u00a0 I got the inspiration from those black and white cookies you see at Starbucks.\u00a0 You may have seen some of my trials on Instagram<\/a>?
