Heat oven to 375\u00baF. Stir flour and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add eggs and vanilla, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in chocolate chips.<\/div>\n

Note from Maureen: \u00a0Use a mini ice cream scooper to make perfectly round cookies. \u00a0Also – cook on parchment paper – the cookies will come off without sticking to the pan.<\/div>\n
Bake for 9 to 11 minutes – but make sure to under bake your cookies for Ice Cream Sandwiches. \u00a0(they need to be cooked all the way through, but still light in color, so they are chewy to eat, once frozen).<\/div>\n

For Ice Cream Sandwiches:<\/div>\n
Let cookies cool then freeze cookies for an hour. \u00a0(this allows you to fill them with ice cream without breaking the cookies)<\/div>\n
Once cookies are frozen, fill them with soften ice cream and then refreeze. \u00a0You can wrap them in saran wrap to save for another time, or put out on a cake stand and serve the same day.<\/div>\n
