My obsession continues with Pumpkins this month as we showcase one of my favorite Halloween Treats… Pumpkin Pie Ice Cream Sandwiches.  Here in the south, we still have warm temperatures, so ice cream is always in season (good excuse, right?)  However,  I love pumpkin ANYTHING\u2026. pumpkin lattes, pumpkin pie, pumpkin bread, pumpkin smoothies<\/a>\u2026. but most of all, PUMPKIN ICE CREAM!  This easy dessert taste just like grandma\u2019s pumpkin pie, except frozen.  See below for this easy festive treat. (and in case you were wondering, I totally watched It’s the Great Pumpkin Charlie Brown<\/em> last night)!<\/p>\n

Ingredients:<\/strong><\/em>
\nVanilla Ice Cream
\nPumpkin Pie Puree
\nPumpkin Pie Spice
\nWhipped Cream
\nGraham Crackers
\n_______________<\/p>\n

Embellishments:<\/strong><\/em>
\nClassic Halloween Printable Party Logos<\/a>
\nTwine
\nCraft Paper<\/p>\n

Directions:<\/strong><\/em>
\n1. Mix softened ice cream, pumpkin pie puree & pumpkin spice to taste \u2013 I mixed approximately a 1\/2 container of icecream with 1\/2 large can of pumpkin puree and 2 tbls of pumpkin pie spice.  However, you can do whatever amounts you like.  (you can\u2019t mess it up\u2026 it really is how strong you want the pumpkin pie to be)
\n2. Line baking dish with wax paper
\n3. Layer the soften ice cream mixture on the bottom, and whipped cream on top
\n4. Freeze<\/p>\n

5. Pull layered ice cream on wax paper out of baking dish
\n6. Cut into squares
\n7. Line top and bottom of ice cream squares with graham crackers
\n8. Refreeze<\/p>\n

9. Add strip of craft paper, twine and party logo to embellish
\n10. Refreeze and serve when ready<\/p>\n
