We are thrilled to have Courtney Dial of Pizzazzerie here today as a guest writer… We are SO excited for her and her new book, Candy Making for Kids. (I am sure you have heard us rave about her 1st fabulous book, too, Push Up Pops.) Enjoy her fabulous recipe and ideas!
Hi Anders Ruff Readers! I’m so glad to be stopping by and sharing my new book – Candy Making For Kids! It’s a super cute book JUST for your little ones (although the recipes are delicious for kids of all ages). None of the recipes use a candy thermometer so they really are fit for little hands. From holiday themed treats (a whole chapter devoted to holidays!) to perfect treats for gift-giving, kids will definitely find lots of favorites in this little cookbook.
One of my favorite recipes is for the sprinkle party fudge! Sprinkles belong on everything, I think. This fudge is quite addictive (so delish). What I love about this recipe is how easy it is to tailor to your party. You can use a specific color scheme of sprinkles or go rainbow style. You can easily cut it out with little cookie cutters like hearts, stars, or circles. You can even write on it with regular icing, royal icing, or melted chocolate! The possibilities really are endless for dazzling up this delicious fudge.
I’m excited to be sharing the recipe with you! If you want to purchase the book, just visit Amazon here or Barnes + Noble here! Want your book signed? Email Courtney@pizzazzerie.com with subject “Book Signature” along with a picture of your receipt (screen shot or other proof of purchase), along with address + I’ll send out your cute book plate to place in your copy!
Rainbow Sprinkle Fudge (Makes 45–50 fudge squares)
• 4 ounces cream cheese, room temperature
• 3 cups powdered sugar
• 1 ⁄4 teaspoon salt
• 1 (11-ounce) package white chocolate chips
• 1 teaspoon vanilla extract
• 1 teaspoon almond extract
• 3 ⁄4 cup rainbow sprinkles
Beat cream cheese until smooth and fluffy. Gradually add powdered sugar and salt. Melt white chocolate in microwavable bowl in 30-second intervals until smooth. Pour into cream cheese mixture and stir until blended. Stir in extracts. Pour in 1 ⁄ 2 cup rainbow sprinkles—do not over-stir or sprinkles will become melted and muddy the color of fudge. Pour fudge mixture into 9 x 9-inch pan lined with wax paper. Sprinkle remaining 1 ⁄4 cup rainbow sprinkles over top of poured fudge. Refrigerate until chilled and then cut into squares.
