Today we are making a cool & refreshing pumpkin treat, Pumpkin Pie Ice Cream Sandwiches.  I love pumpkin ANYTHING…. pumpkin lattes, pumpkin pie, pumpkin bread, pumpkin smoothies…. but most of all, PUMPKIN ICE CREAM!  This easy dessert taste just like grandma’s pumpkin pie, except frozen.  Watch out chocolate ice cream sandwich – here comes something ever better…. Pumpkin Pie Ice Cream Sandwiches!

Ingredients:
Vanilla Ice Cream
Pumpkin Pie Puree
Pumpkin Pie Spice
Whipped Cream
Graham Crackers

Craft Paper

Directions:
1. Mix softened ice cream, pumpkin pie puree & pumpkin spice to taste – I mixed approximately a 1/2 container of icecream with 1/2 large can of pumpkin puree and 2 tbls of pumpkin pie spice.  However, you can do whatever amounts you like.  (you can’t mess it up… it really is how strong you want the pumpkin pie to be)
2. Line baking dish with wax paper
3. Layer the soften ice cream mixture on the bottom, and whipped cream on top
4. Freeze

5. Pull layered ice cream on wax paper out of baking dish
6. Cut into squares
7. Line top and bottom of ice cream squares with graham crackers
8. Refreeze

9. Add strip of craft paper, twine and party logo to embellish
10. Refreeze and serve when ready

This would be great on gingerbread cookies as well!  My family went crazy over these when I finally let them eat them!
