Football Party Recipe – Kickin’ Buffalo Chicken Sandwiches

My Vintage Football Party was a huge success!  I know I’m going to get tons of questions about where I found everything, and I’m excited to share a recipe with you all today for my Kickin’ Chicken Sandwich Recipe!

I know everyone is obsessed with Chicken Wings, so I wanted to do my take on the Chicken Wings, but in a sandwich.  Let’s just say this Kickin’ Buffalo Chicken Sandwich scored me a lot of points with my guests!  I’m excited to share the easy and yummy recipe today! Kickin’ Buffalo Chicken Sandwich Recipe:

Ingredients:
– 4 Chicken Breasts
– 8 oz. Block of Cream Cheese
– 1 1/2 c. Buffalo Wing Sauce
– 3 T Butter
– 1 Packet Ranch Dressing Mix Powder
– Bulillo Rolls (Sam’s Club has the football shaped ones!)
– 6 c. Cole Slaw Mix (Sam’s Club Fresh Foods section)
– 1/2 c. (or more to your liking) Ranch Dressing (From a mix or store bought)
– 1/4 c. thin slices of celery
– Cheddar Cheese Slices
– Salt and Pepper to taste

Directions:
Chicken:
Add your 4 chicken breasts, 1 packet of ranch seasoning and 1 Cup Buffalo Wing Sauce to a crock pot.  Cook your chicken in a crock pot on low.  (I start mine in the morning so by dinnertime it is nice and tender and easy to shred).  Once chicken is cooked, shred it and mix in the additional 1/2 c. Buffalo Wing Sauce and the 8 oz. block of cream cheese, and the 3 Tablespoons of butter.

Cole Slaw Topping:
Mix together 6 c. of cole slaw mix (we like the kind with the carrots) and 1/2c. Ranch Dressing and 1/4 c. thin slices of celery.  Add more ranch dressing, salt and pepper to taste.

Set your oven to 350 degrees.  Cut your Bulillo Rolls in half, lengthwise.  Add about 1/3 c. chicken mixture and add one slice of cheddar cheese on top.  Bake in the oven for 5-7 minutes, or until cheese has melted.  Remove from the oven and top with the celery cole slaw mixture and add the top bun.  Enjoy!

You do not have to melt the cheese on top, but we recommend it! If you have a large crowd, you can serve it in a crock pot and skip the toasting part!
