Ruff Draft: Heart Healthy Valentine’s Day Lunch

Last week I showed you how to bake homemade treats for your pups – today, we thought it would be great to show a Heart Healthy Valentine’s Day lunch for that special someone!

Who says Valentine’s Day has to be sugary-sweet???  I like to find ways to make my family feel like they are getting a special treat without all the calories and added sugars!

My Ruff-Style,  Heart Healthy Valentine’s Day Lunch includes:

Ham & Cheese Wraps

Strawberries

Mixed Greens with Balsamic Vinaigrette

Oatmeal Pops

Milk

Ham and Cheese Wraps

Ingredients:

Ham

100% whole wheat soft tortillas

Laughing Cow Light Swiss Cheese Spread (1/2 of one triangle used) – it’s a light creamy cheese spread… hardly any calories, and taste better than mayo!

**If you want this extra healthy and more filling:  add spinach leaves, red pepper or tomato

Directions:

1. Layer tortilla, spread cheese, layer ham, layer 2nd tortilla

2. Use heart cookie cutter to cut out heart shape.

3. Use smaller heart cookie cutter to cut through first layer of tortilla – remove that piece of tortilla, so pink meat shows through.

Strawberries

Ingredients:

Directions:

1. Cut green stem off, by cutting a “V” into top of strawberry

2. Slice strawberry in half from top to bottom creating two hearts

Mixed Greens with Balsamic Vinaigrette

Mixed Greens

Ingredients:

Mixed Greens (I use any organic pre-packs that include spinach)

Low-fat Mozzarella Cheese

Chopped Tomatoes

1 Teaspoon of Olive Oil

A few splashes of Balsmic Vinegar

Oregano, Garlic Salt, Basil, Salt & Pepper

Directions:

1. Put mixed greens into container

2. Sprinkle: Oregano, Garlic Salt, Basil, Salt & Pepper onto mixed greens

3. Add Teaspoon of Olive Oil

4. Add a few splashes of Balsamic Vinegar (according to your taste)

5. Mix all of it together

6. Cut out a heart shaped mozzarella cheese slice

7. Add chopped tomatoes on top of cheese

Oatmeal Pops

Oatmeal pops

Ingredients:

1 cup of all-natural applesauce

1/2 stick of butter

3/4 cup of brown sugar

1/2 cup of granulated cane sugar

2 tbsp of milled flaxseed

1 tsp of vanilla

1 1/2 cups of whole wheat flour

1 tsp of baking soda

2 tsp of cinnamon

3 cups of oats

**1 cup of cranberries or rasins and/or 1/4 cup of chopped walnuts if you want!

**I added pink food coloring too, just for fun!

Directions:  Preheat oven to 350 degrees

1. Mix all ingredients together except flour & oats (also leave out cranberries/nuts)

2. Use mixer, and slowly blend in flour

3. Once creamy, add oats

4. Add pink food coloring if you want and mix – my girls like everything to be pink, so why not??

5. Add cranberries and nuts if you like!

6. Lay parchment paper on baking sheet

7. Using a heart shaped cookie cutter, put batter in heart.  Remove cookie cutter (will need to scrape a little off the sides of cookie cutter, and reshape heart slightly).  Add wooden stick – use extra batter to cover it so the stick will really bake into cookie. 

8. Repeat as many times as you can fit onto baking sheet – I made about 7 pops at a time.

9. Bake for 12-15 min

10. Let cool on cookie rack, so cookie hardens around stick properly.

11. Add pops to strawberry milk (healthier version:  use white milk and a splash of pink food coloring)

This lunch is perfect for a Valentine Playdate and appeals to both mom & kids!!!

  1. Those oatmeal pops look and sound delicious (I have a real weakness for all things oaty) and the presentation in the little milk bottles with strawberry shake is simply adorable!!
