A little birdie reminded us that Dr. Seuss’ birthday is just around the corner…. March 2nd is his official birthday. With St. Patty’s Day coming up as well, we thought it would be fun to put together some Dr. Seuss snacks that would be great for: Dr. Seuss’ Birthday (March 2nd), St. Patty’s Day (March 17th), After-school snacks or even a Breakfast Birthday Celebration!
We also wanted to offer a FREE PRINTABLE andersruff-try them try them in honor of Dr. Seuss’ Birthday!!! It’s one of my favorite quotes from Green Eggs & Ham:
“You do not like them, so you say? Try them! Try them! And you may.” (I used to refer to that book, when I needed to convince my kids to eat something they thought they didn’t like)
Stick these party logos on any new food, and I bet your kids will try it!!! 🙂
Supplies needed:
Paper plates, napkins & cups

Ingredients for Snacks:
hard boiled eggs – shells removed
ham – cut into circles
small tomatoes – I used campari size tomatoes
fresh mozzarella cheese log – one large circle, several small circles to match size of small tomato
orange slices
apple slices
star fruit (it has an odd taste – you could always use a star cookie cutter and cut out some other fruit for the “starfish”)
swedish fish

So basically, I made three edible stacks from 3 of my favorite Dr. Seuss books!
First, I lined my paper plate with the patterned paper from our Dr. Seuss Inspired Birthday Collection – such a simple touch that makes a bold statement!
Then, onto the Stacks!!!
Green Eggs & Ham Stack
Directions:
Using a large bowl, mix green food coloring and water – I used the green gel in the baking section… I put about a 1/4 teaspoon of it in the water
Add the hard boiled eggs and mix them around in the colored water until you desired coloring
Cut your ham into various circles – I used cookie cutters
Add your pieces of ham to green colored water and remove once you have desired coloring
Place hard boiled egg on ham stacks, and use a wooden skewer to hold together
Add pre-cut & printed party logo

Cat in the Hat Tomato & Cheese Stack
Directions:
Cut one large piece of mozzarella cheese (width of cheese log)
Cut capari sized tomatoes
Cut (with circular cookie cutter) mozzarella cheese to match tomato size
Layer cheese and tomato to create the “hat”
Use wooden skewer to hold together
Add pre-cut & printed party logo
***For a caprese salad version, add balsamic vinegar with olive oil, fresh basil, salt & pepper and garlic salt to the tomatoes before assembling stack

One Fish Two Fish, RED FISH, Blue Fish Stack
Directions:
Slice orange, apple, and star fruit
Layer and add a Swedish fish to the top of “starfish”
Use wooden skewer to hold together
Add pre-cut & printed party logo

For the final embellishments, use the patterned paper as a napkin wrap and use the party logo for a cup detail!
