Chocolate Chip Cookie Ice Cream Sandwich

I just got back from visiting Maureen’s family in Milwaukee over the weekend.  We had special guests who came to visit us from Australia… you may recognize this amazing lady – Yolanda Cerra, from Kiss with Style (aka Kiss Me Kate).  She and her family came over to the states again, and while traveling the country they were able to join us in Milwaukee for a FUN filled weekend!  They came in Friday night, and Maureen & I made an All-American southern BBQ dinner, along with the American Classic, Chocolate Chip Cookie Ice Cream Sandwiches for dessert (Maureen’s specialty).  The ice cream sandwiches were the perfect treat for a hot summer evening – I had never eaten home-made ones and was surprised by how delicious they were, so I wanted to share Maureen’s recipe with you all today.  So easy and SO GOOD!

Maureen follows Ghirardelli’s chocolate chip cookie recipe, with a few changes:

INGREDIENTS

11 1/2 ounces Semi-Sweet Chocolate Baking Chips 
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla
2 1/4 cups unsifted flour
1/2 teaspoon salt

Ice cream (to fill)

**NOTE  – Maureen does NOT use baking soda or baking powder.  She likes how the cookies bake with no baking powders – results in a flat, chewy cookie with crisp edges.

Ice Cream Sandwiches with Chocolate Chip Cookies

INSTRUCTIONS

Heat oven to 375ºF. Stir flour and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add eggs and vanilla, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in chocolate chips.
Note from Maureen:  Use a mini ice cream scooper to make perfectly round cookies.  Also – cook on parchment paper – the cookies will come off without sticking to the pan.
Bake for 9 to 11 minutes – but make sure to under bake your cookies for Ice Cream Sandwiches.  (they need to be cooked all the way through, but still light in color, so they are chewy to eat, once frozen).

For Ice Cream Sandwiches:
Let cookies cool then freeze cookies for an hour.  (this allows you to fill them with ice cream without breaking the cookies)
Once cookies are frozen, fill them with soften ice cream and then refreeze.  You can wrap them in saran wrap to save for another time, or put out on a cake stand and serve the same day.
