We had such great feedback when I shared my favorite cookie recipe that I created (Pink Lemonade cookies!) so I thought I’d start sharing more often from my sweet kitchen.
Who doesn’t love chocolate and peanut butter? (Oh yeah, Adria) Well, I know most of you probably love it! Well, as you may know, I am obsessed! (I have a designated Pinterest board for the flavor combo for gosh sakes!)
I was in the grocery store and my kids were begging for pretzels. I don’t buy them regularly so I never think to use them in a recipe. I was having a chocolate craving which typically means that I want peanut butter and chocolate and then it hit me…. PB Chocolate Pretzel Truffles!
So here goes the recipe!
The ingredients are easy!
1/2 cup Peanut Butter (I prefer Organic Trader Joes Unsalted)
1/4 cup Finely Ground Pretzels
2 Tablespoons Confectioners Sugar (I only add this because my peanut butter doesn’t have sugar so this helps sweeten it up a bit)
1/2 cup melted Chocolate Chips
Directions:
1. Use your food processor to grind up pretzels. It is okay if there are still some small chunks. It makes the texture nice and crunchy!
2. Mix the peanut butter, ground pretzels and confectioners sugar
3. Roll into balls (I like mine about the size of a quarter width.
4. Put the balls on a baking sheet with parchment paper and freeze until firm (about 30 minutes)
5. Melt the chocolate chips and dip the balls into the chocolate. I use a fork to dip and tap excess chocolate off
6. Place the chocolate covered PB Balls on the parchment and let it cool.
6.2. Optional: Add a sprinkle of sea salt to the tops.
7. Eat, Enjoy, Repeat. Share with friends!
