Happy Halloween Everyone!!! To celebrate this favorite pumpkin holiday, we wanted to share a fun way to use your pumpkin seeds! Everyone knows how to roast them… but have you ever used them for chocolate bark? I know I have not… so I wanted to try it this year!
I found a recipe on-line, and then tweaked it… I substituted with some of my favorite ingredients – just to give it that Ruff effect!

Ingredients:
1. (1) 12 oz bag of dark chocolate chips
2. 1/2 cup of roasted pumpkin seeds (salted only)
3. 1/2 cup of almonds
4. 1/2 cup of dried cranberries
5. a few dashes of pumpkin pie spice OR {ginger, cinnamon, & nutmeg}
6. a few dashes of rock salt (or sea salt)

Directions:
1. Line a baking sheet with parchment paper. Spread the nuts, seeds, cranberries & spices on baking sheet.
2. In a bowl set over a saucepan of gently simmering water, heat the chocolate chips, stirring occasionally, until it is about two-thirds melted; do not let the bowl touch the water. Remove the bowl from the saucepan and stir the chocolate until it is completely melted. If the chocolate has not melted completely and is still too cool, set it over the saucepan for 1 or 2 minutes longer, stirring constantly; do not overheat.
3. Spread the chocolate over top of the seed mixture. Sprinkle a little rock salt on top to finish.
4. Refrigerate the bark for about 10 minutes, until hardened. Remove the parchment paper, break into pieces.
The sweet & salty mixture create the perfect fall treat! Mix any of your favorite fall seeds, nuts & berries to personalize it with your own touch!
I love the flavor combinations that I created, and I will for sure be passing this out during my Thanksgiving feast this year!
